<p class="MsoNoSpacing" style="margin: 0cm 0cm 0pt;"><span style="font-size: small; font-family: Calibri;">3. Colocar todas elas em uma peneira e ir virando para que escorra o óleo que vai se formar (Para apressar o processo, dê uma espremidinha nas beringelas).</span></p>
<p class="MsoNoSpacing" style="margin: 0cm 0cm 0pt;"><span style="font-size: small; font-family: Calibri;">4. Terminada a preparação, é só picar com uma faca todas elas bem picadinhas até que vire uma pasta. Use uma tábua de madeira para isso.</span></p>

Alho (6 dentes)<br />

<p>Descascam-se 5 dentes de <strong>alho </strong>e cortam-se em lâminas. Retiram-se os pedúnculos (partes verdes no topo) às <strong>beringelas </strong>e, em cada uma delas, fazem-se cerca de 10 cortes nos quais se introduz uma lâmina de alho em cada um. Dispõem-se as beringelas directamente numa grelha e levam-se ao forno, previamente aquecido a 200º. Assam-se, virando-as de 10 em 10 minutos, durante cerca de 45 minutos, até que fiquem tenras. Retiram-se do forno e cortam-se ao meio longitudinalmente. Com uma colher retira-se-lhes a polpa. Num tacho, aquece-se o <strong>azeite </strong>e adiciona-se-lhe a mistura da polpa das beringelas com 1 alho picado e o <strong>tomilho</strong>. Em lume brando, mexer esta mistura com umas varas durante cerca de 10 minutos de modo a que fique fofa. Antes de se desligar o fogão acrescenta-se mais um pouco de tomilho. Tempera-se depois com <strong>sal</strong>, <strong>pimenta </strong>e <strong>caril</strong>. Arrefece-se rapidamente este preparado (sobre pedras de gelo), juntando por fim <strong>sumo de limão </strong>e <strong>maionese </strong>a gosto.</span></span></span></p>

Mistura todos os ingredientes da massa e vai acrescentando a água até a massa ficar homogénea e moldável com as mãos. Deixa descansar algum tempo. Estica com o rolo da massa e corta círculos.<br />
Para o recheio, coloca todos os ingredientes num sertã antiaderente, deixa cozinhar e tempera. Depois de arrefecer um pouco, recheia os círculos de massa e fecha-os em cima.<br />
Leva a forno a 180ºC/200ºC num tabuleiro untado com óleo até dourar.</span></span></span></p>

Pode, depois, ser desfeita, em puré, juntamente com a polpa, num batedor. <span id="more-10"></span>Faça uns pequenos cortes<span style="mso-spacerun: yes;">  </span>na<span style="mso-spacerun: yes;">   </span>pele, com uma faca, polvilhe com um pouco de sal e deixe repousar durante cerca de meia hora; escorra depois o líquido que tiver saído. Isso fará com que a pele perca o seu sabor amargo. Corte as beringelas ao meio, no sentido do comprimento. Esfregue-as com um pouco de óleo, tempere com sal e pimenta e ainda um pouco de sumo de limão, e envolva-as, depois, como se explicou em cima. Coloque-as num prato untado e cubra-o. Leve ao forno morno (140º C), durante, pelo menos, uma hora, ou até que as beringelas estejam muito macias. Retire-lhe a pele, ou esmague todo o vegetal; poderá utilizar um batedor ou uma peneira. Misture com o resto do sumo de limão e qualquer outro tempero que prefira.</span></p>
