Passe os cubinhos pela farinha de trigo. Em seguida retire os excessos de farinha de trigo.<br />
Frite aos poucos na margarina. Reserve.<br />
Coloque mais margarina e frite a cebola, até que a água tenha secado. Refogue os champignons fatiados. Junte a água dos champignons e deixe ferver.<br />

<p>Coloque o testo e leva a cozer em lume brando durante 5 minutos. Então apague e deixe prosseguir a cozedura durante mais 30 minutos. Sirva as beringelas no próprio utensílio. </span></p>

Pica a polpa retirada da beringela. Coloca a soja de molho em água fria até dobrar de tamanho. Espreme para tirar o excesso de água e reserva. Refoga a cebola e o alho no azeite até dourar, depois acrescenta o tomate e a polpa da beringela e refoga até soltar água. Junta a soja e, se necessário, um pouco mais de água. Cozinha até que a beringela murche e sobre pouca água. Escorre as metades de beringela e recheia com o refogado, acrescentando duas azeitonas para cada metade e polvilhando com pão ralado. Coloca numa assadeira grande untada com um pouco de margarina. Por cima coloca uma camada de batatas à rodelas lavadas e com casca cobrindo a cebola. Pincela com azeite e tempera com pimenta, cominhos e sal.<br />
Após a beringela às rodelas ter estado em sal grosso meia-hora e depois ter sido passada por água, coloca-a por cima das batatas. Volta a colocar uma camada de batatas e tempera-as como anteriormente. Coloca alho francês à rodelas por cima e por fim mais uma camada de batatas temperadas. Vai ao forno por 40 minutos a 150ºC.</span></p>
